Chickweed (Stellaria media) has a mild, slightly earthy and grassy flavour with a clean, refreshing finish. The pale green liquor is light and easy to drink, with none of the bitterness found in stronger herbal teas.
To brew, add 1-2 teaspoons of dried chickweed per cup to water at 90-100°C. Steep for 5-10 minutes, then strain and enjoy. The herb can be re-steeped for a second lighter infusion.
